Koi Fusion takes Korean Fusion to a whole new level, combining Korean barbecue with Mexican flavors and tortillas. Starting in 2009 as one mobile taco truck, Chef Bo Kwon has used Mama Kwon’s secret family marinades, fresh vegetables, and locally-sourced tortillas to grow to a fleet of trucks, carts, and brick-and-mortar locations.
